Buffet is a kind of system where visitors can serve themselves. It is a modern meal system for feeding large numbers of people with minimal staff. The catering unit known as buffet was developed in France in the 18th century. It became then popular in England and then it soon spread on the continent too.
The canteen is a type of food service which is located in a large office building with no table service. There are only food-serving counters in it. Customers just walk along, choose and place the meal on a tray and at the end of the counter they pay at the cash desk. For certain kinds of food there may be a system where the customer orders and he/she is served by personnel behind the counter. The canteen derives from earlier food service traditions brought to California from Mexico by immigrants.
In office buildings and schools there has been a new initiative of selling more healthy food stuff including more fruit, low-calorie food and juices instead of chips, cakes, soft drinks and fattening items.
